Shared food, communal cooking, and the spaces where they happen have been my passions since childhood, shaped by growing up in a family of restaurateurs. In 2021, I joined forces with a friend to open a restaurant in our hometown of Madrid—a concept where food, design, and privacy intertwine, born from the post-COVID desire to reinvent intimacy.

Problem:

After the outbreak of COVID-19, many people became reluctant to dine out, wary of crowded spaces and lingering health risks. This sudden shift in behavior left restaurants struggling to regain trust and adapt to new expectations around safety, privacy, and comfort.

Susurro brought a new ACUS technology to the market that offered a step-change in sensitivity, sound-to-noise ratio and bandwidth, opening unlimited possibilities in Non-Destructive Testing, inline inspection, serial testing and 100% material characterisation.

Solution:

Inspired by our experiences during COVID-19, room n.1 was designed to offer all the privacy of a home with the service, atmosphere, and exclusivity of a fine dining venue: a private gathering. Our restaurant accepted one reservation per day, seated up to 12 people, and offered a private, tailored dining experience. Its design paid tribute to Verner Panton and the Pop movement of the 1960s and 1970s—echoing the surreal worlds of David Lynch. The menu blended Spanish and French influences, evolving constantly with the rhythm of the seasons and the availability of fresh produce.

Vision & execution:

Our vision was to build a network of one-table restaurants—intimate and eccentric “rooms” tucked within small but prime city spaces. Each space would host rotating chefs with distinct styles, moving between rooms like musicians on tour, creating a dynamic dining ecosystem in perpetual motion. After two successful years of dinners and experimentation, my co-founder and I decided to sell room n.1 as our paths took us to new chapters in the US and Mexico.
